As the myth of Teu says, our task is to shorten the distance between heaven and earth, and that mission begins long before the first distillate touches the glass. For a bottle of Casa Teu to reach the hands of a connoisseur anywhere in the world, we must first wait. Not months, but years—six, seven, sometimes eight—during which the plant absorbs the minerals of our red soil and the sun’s energy. Agave has no clock; it has a language of its own, and my job is to know how to listen to it.
